Ingredients
- 4 cups (960 ml) milk of choice
- 1/4 cup (20 g) unsweetened cocoa powder
- 3 tbsp granulated sugar, or to taste
- 1/4 tsp ground cinnamon
- 1 tsp vanilla extract
- Small pinch of salt
Method
- Whisk cocoa, sugar, cinnamon, salt, and 1/2 cup of the milk in a saucepan until smooth.
- Gradually whisk in the remaining milk. Warm over medium-low heat, stirring frequently, until steaming; do not boil.
- Remove from the heat and stir in vanilla. Taste and adjust the sweetness if needed.
- Pour into mugs and allow to cool to a comfortable drinking temperature before serving.
Make Ahead
Up to 1 month ahead: mix the cocoa, sugar, cinnamon and salt and keep it in a jar. Up to 3 days ahead: make the full batch and refrigerate. For a crowd, keep it warm in a slow cooker on low, stirring occasionally.
Storage and Reheating
Storage: Refrigerate covered up to 3 days. Stir or whisk before reheating, because cocoa settles.
Reheating: Warm over medium-low heat, whisking, until steaming. Do not boil.
