Ingredients

  • 1 lb refrigerated pizza dough
  • 1/3 cup basil pesto
  • 1 cup shredded low-moisture mozzarella
  • 2 tbsp grated Parmesan
  • 1 tbsp olive oil
  • 1 small red bell pepper, diced finely.

Method

  1. Heat oven to 400°F. Divide dough into 12 equal pieces. Flatten each, add about 3/4 tsp pesto and a pinch of mozzarella, then pinch shut firmly. Arrange seam-side down on a parchment-lined sheet pan as a tree: rows of 1, 2, 3 and 4 rolls, with 2 below for the trunk.
  2. Leave a little space for expansion. Brush with oil and sprinkle Parmesan.
  3. Bake 20–25 minutes until deeply golden and cooked through; check a center roll for raw dough. Sprinkle with tiny red pepper pieces after baking.
  4. Rest 5 minutes and pull apart.
