Ingredients

  • 1 lb rigatoni
  • 1 lb mild Italian sausage
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 28-oz can crushed tomatoes
  • 1 15-oz can tomato sauce
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1 cup whole-milk ricotta
  • 2 cups shredded mozzarella
  • 1/2 cup grated Parmesan
  • 2 tbsp olive oil
  • basil to finish.

Method

  1. Heat oven to 375°F. Cook pasta 2 minutes less than package directions. Brown sausage in oil; add onion and cook 5 minutes, then garlic for 30 seconds.
  2. Add tomatoes, sauce, oregano and salt; simmer 15 minutes.
  3. Toss pasta with most of sauce. In a 9 × 13-inch dish layer half the pasta, dollops of ricotta and half the mozzarella; add remaining pasta, sauce, mozzarella and Parmesan.
  4. Cover with foil and bake 20 minutes; uncover 10–15 minutes until bubbling.
  5. Rest 10 minutes and add basil.
