Ingredients

  • 2 tbsp olive oil
  • 1 small onion, finely diced
  • 3 garlic cloves, minced
  • 2 28-oz cans whole peeled tomatoes, crushed by hand

  • 1 tsp dried oregano
  • 1/4 tsp red pepper flakes, optional
  • 1 tbsp butter, optional
  • torn basil.

Method

  1. Cook onion in oil over medium heat 6–8 minutes until soft, without browning.
  2. Add garlic for 30 seconds.
  3. Add tomatoes, salt, oregano and optional pepper flakes. Simmer uncovered 20–25 minutes, stirring occasionally, until lightly thickened.
  4. Stir in butter if using and finish with basil.
  5. Taste and adjust salt. Use for pasta, pizza or baked meatballs. Refrigerate up to 4 days or freeze in meal-size portions up to 3 months.
