- 4 small quesadillas
Ingredients
- 8 small flour tortillas
- 2 cups shredded Monterey Jack or cheddar
- 1/2 cup canned black beans, drained and dried
- 1 red bell pepper, cut into thin strips
- 8 pitted black olives
- 1 tbsp neutral oil
- salsa or plain yogurt to serve.
Method
- Divide cheese and beans among four tortillas and top with remaining tortillas. Cook in lightly oiled skillet over medium heat, 2–3 minutes per side, until golden and cheese melts.
- Rest briefly, then cut each into a round with a large biscuit cutter if desired (save scraps for snacking). Arrange four bell-pepper strips on each side as spider legs, and two olive halves as eyes; keep the edible decorations on the plate so they stay crisp.
- Serve warm with salsa or yogurt.
